When Chocolate and Waffle say, “I do.”

Chocolates and waffles generally flirt with each other. There is some caressing at best with chocolate happy to be a topping as a sauce on the waffle or in the form of a chocolate ice cream in varying stages of blah. But a full time commitment? Rare. But like anything done with commitment, when chocolate decides to commit itself to the waffle, the result is magical. Like any committed relationship, not everything is sweet. Not everything is bitter, but the magic is in the ability to appreciate both. Throw in friends like coffee and banana once in a while, we have a winner!

Marriages more often than not, need a pastor. In this case, there were two. Nitin Chordia from Cocotrait and Christoph from Wafobel together decided to marry these two things. Both are extremely fond of their respective kids, Nitin a chocolate stalwart and Christoph, the father of Wafobel, decided to the honours themselves!

Rich pure in house Chocolate mixed with the Belgian waffle batter should make any dessert fan go weak on the knees. But if that gives you thoughts of having a super sweet waffle, think again. The batter is folded with chocolate so there is chocolate everywhere. Inside, outside, on the crust, in your mouth; simply everywhere. Then there is more. Friends add spice to life and in the waffle world, friends like peanut butter and banana join in the Peanut Choco Waffle to create a nice variation. When they wanted to be by themselves, they were doing the Classic Fudge, a beautiful classic love story. Thick fudge gives you memories with bitter sweetness. And they get a little creative with the Chip n Nib waffle, where there is both the chocolate chips and the cocoa nibs in the waffle. I guess this happens when the chocolate decides to emphasise its role in the relationship a little more. No complaints.

Bring two wonderful things together is a challenge. You can bring wonderful ingredients, but bringing a DISH, that too a tried tested and loved one like waffle with an INGREDIENT, again a tried tested and loved (OK loved is an understatement for chocolate), is not easy, but these two have pulled it off. I believe there has been a lot of preparation to make sure this works. After all it is the bringing together of two feisty ones! Oh this is an inter-country marriage too. The Belgian Waffle with the Indian Chocolate!

The festival is on till the end May. The fact that besides bringing joy to the tongue, it is also a joy to the heart. Beyond the ‘heart’ in a relationship, I’m talking about the heart that pumps blood. With no butter, no cream and the fat coming purely from cocoa butter, this is healthy. Now that is a winning combination!

Waf O 'Bel

If a restaurant shuts and you cry, then you really loved that place! But if you loved it, then so many more would have loved it too! Why will it shut then? Yeah, funny. No, you crying is not the funny part, but the restaurant closing!

And the smile when it re-opens!?! HHHHUUURRRRAAAAHHHH. CCCHHEEEEEEEEEEESE! Yeah, same feeling when Wafobel disappeared and then reappears in a brand new, chic avatar! From a tiny 10 square feet outlet to a swanky new place, Wafobel has grown! It now comes with a larger menu, some savoury waffles and....wait. If you're expecting chicken on your waffles, stop your dreams right now. It is still pure vegetarian!!! We settled for one stuffed waffled platter to sample all of their savoury waffles. Really nothing to write home about!

But the real waffles (yeah the sweet ones) were all yummy! Crisp on the outside, slightly soft on the inside and wonder how they do it without egg in the recipe! The two chocolate ones were great, while the Waffle of the Month, a pistachio ice cream waffle which did not match up to the other two, was still great!

Conspicuous by its absence is the Leige waffle! I used to love them when Wafobel operated out of Sam's pizza and I really hope they bring it back here!

Wafobel is now on 13th Ave, off Harrington road, in the second floor of a quaint little building.

Yippee!!!

Hurrah!!!

Phew!!!

Finally!!!

Waffles without Maple Syrup!!!!

I took a course on mind-reading. I can read your mind now. Its thinking, "is this guy nuts?" Waffles without maple syrup!?! Remember the days we had these pizzas with super thick base? Later we learnt that Italian pizzas are thin crust? Ditto with waffles!!!

Now, French Fries are not French!!! They are Belgian!!! Similarly, Belgian Waffles are not Belgian!!!  While this is not the time to discuss why and how, let's just say, you believe me! Yeah? Good! OK, I know you will be googling it now, but once you're done and you believe me again..........

So, the most common type of waffles in Belgium are what is called the Liege waffles. These are the ones that have the slightly funny shape to it, like it was eaten by somebody on either sides!!! These are made, not with a batter, but with dough which gets flattened out!!!

And finally, we get these in Chennai!!! Starting at Rs 70 and all the way based on all the extras you add, I still like the base one without anything on top! Now, if you've been used to fluffy waffles, crisp on the outside, soft on the inside (I don't know of too many good places in Chennai which serves good waffles,) the funny shaped liege waffles will be a little different. Actually a lot different. The Liege waffles are dense, thicky and heavy with caramelised sugar!!! So no dusting of sugar is done on top. No maple syrup on top!!!

Don't get me wrong, I love maple syrup. I love waffles with maple syrup (not the 2% ones, but the real ones)! But I love the Liege waffles too! While the wife wanted to have it with whipped cream and chocolate, I had the one plain!!! Nothing on top!!! Its a little dry, almost bagel type and you sort of know that I love bagels too!! OK, I know I say love everything, but that why food is so good!!! Other foods won't hate you because you love other foods and you can love em all!!!

So, yeah, Waf-O-Bel is here and they serve you Liege waffles, but they also have the Brussels version if you don't like the bite shaped Liege ones!!! They have the maple syrup, but you will have to ask for it!!! If you try the Liege ones, prepare to either hate them or love them!!!! If you hate them, give them another try!!! If you still don't like them, goodbye!

Waf-O-Bel is on Jaganathan Street, Nungambakkam, in the same building that houses Moti Mahal and the erstwhile Sam's Pizza which now has a new name!!!
