Bullseye Egg Appam (v). Appam is a type of pancake made with fermented rice batter & coconut milk. It is a common South-Indian delicacy eaten most frequently for breakfast. Egg Appam is a lovely dish in itself and if you leave the egg half cooked, the yolk provides a nice liquid & color contrast against the crisp appam. You really don't need a curry or chutney to eat this dish. Its quite satisfying in itself.
