Chicken Biriyani. If there’s one aroma that always made me smile on an occasional off day at school, it was the irresistible whiff of biryani. Quite a few of my school mates had a strong connection with Ambur, a town in Tamil Nadu which is famous for its biriyani. There are several ways of preparing biryani. Hyderabadi style, Lucknow style, Bangalore style etc. The taste of biryani differs according to the type of biryani & it’s preparation. Ambur Biryani is one of the famous methods of making biriyani which emerged during the Nawab of Arcot’s regime. Ambur Star Biryani is famous across South India. They also have an outlet in Chennai & Bangalore. Prepared mainly with Jeeraga Samba rice, both chicken & mutton are used for this; although Ambur Biryani might be synonymous with mutton. It is usually served with Brinjal curry (Khattay Baigan) & Cucumber Raitha, which makes your feast a delightful one.
