Five spicy crispy corn. Crispy fried corn kernels tossed with flavor-givers like Chinese five spice powder, ginger, garlic & spring onions. These days nibblers are so much more popular at meals. So here is an​ easy​ way to make​ fried crispy corn. This is can be made in a jiffy without much fuss & preparation.​ Of course if the fresh corn kernels are cut off the cob already.​ Peeling off the husk layers & removing the corn from the cobs is pretty time consuming. If you have some frozen corn it sure makes life easy​.​ .. ​Ingredients: • 1 cup boiled sweet corn kernels​ ​• Oil for deep frying​ • 2 tbsp plain flour • 4 tbsp Cornflour • Salt ​& pepper ​to tast​e • 2 tsp finely chopped garlic • 2 tsp finely chopped ginger • 1 tsp finely chopped green chillies • 1/4 cup finely chopped spring onions whites and greens • 2 tsp s​chezuan​ sauce​​ • 1 tbsp finely chopped spring onion greens (for the garnish). .. Method: • Combine the corn, plain flour, cornflour, salt, pepper & 1 tbsp of water in a bowl & mix well. • Heat the oil in a non-stick ​pan​ & deep-fry the corn till they turn golden brown from all sides. • Once they turn crispy, drain them on to a kitchen paper​ & keep aside. • Heat the oil in a non-stick pan, add the garlic, ginger & green chillies & sauté on a medium flame for a few seconds. • Add the spring onion whites & greens & sauté on a medium flame for a few seconds. • Add the schezuan sauce, deep-fried corn & a little salt, mix well & toss on a medium flame for 1 minute. • Serve immediately.​​ Note: Do not crowd the oil by adding to much corn. It will take much longer to get crisp and won't be crisp enough. Be careful, the corn may burst sometimes. So stand a feet away from the oil. ..
